Here's my knife (part II).
The first one wasn't balanced right and the heat treating cracked it, it only lasted through 2 deer before it gave out. The gut hook on part I was also too small to work on anything but fawns.

The best thing is the steel. It's some tool cutting steel a friend gets that we use red hard. I've had it go through two deer one season (including hacking apart bones and butchering) and it could still shave hair.

One of these days I'm going to make a whole butchering set but the steel is about $80 for not that big of a sheet.

Because of the high carbon content it comes out with a damascus type look to it that is almost impossible to polish off. I stripped the diamonds off a drill bit trying to open a hole in one of my friend's creations.

I really like the look of that knife. I bet it would also be better for the carpel tunnel.

Thanks. I've seen a similar design for sale since I made this but I wouldn't ever be able to remember where.

Worn out wrists is part of the design plan.
Since we hang our deer from a Bobcat to field dress them the gut hook doesn't work out too good with the wrist but is tolerable. It would work better for actual field dressing on the ground.

I don't think I've cut a hole in a hide since I made this. I love the large rounded point. I have a hide scraper based on an Eskimo design in the plans if I ever cough up the money for the sheet of steel.

BTW, if you ever wonder why custom knife makers charge so much, it's because it takes a lot of work. And at least with this steel you wear out tools. I figure a small porta-bandsaw blade, 2 jigsaw blades and 3 sanding belts at least.
